Supreme!\" width=\"450\" height=\"300\" srcset=\"https:\/\/dutchblitz.net\/recipes\/wp-content\/uploads\/2008\/11\/img_8604wmsm.jpg 1024w, https:\/\/dutchblitz.net\/recipes\/wp-content\/uploads\/2008\/11\/img_8604wmsm-300x200.jpg 300w\" sizes=\"auto, (max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<p>This is a veggie casserole that we make <em>at least<\/em> once a week over the winter.<\/p>\n<p><strong>INGREDIENTS:<\/strong><\/p>\n<p><span style=\"text-decoration:underline;\">Veggies:<\/span><\/p>\n<p>2 cups broccoli<br \/>\n2 cups cauliflower<br \/>\n1 \u00bd cup sliced carrots<br \/>\n1 cup sliced mushrooms<\/p>\n<p><span style=\"text-decoration:underline;\">And:<\/span><br \/>\n1 cup grated cheese<br \/>\n1 box seasoned croutons &#8211; crushed<\/p>\n<p><span style=\"text-decoration:underline;\">Sauce:<\/span><\/p>\n<p>2 eggs<br \/>\n\u00bd cup mayo (or Miracle Whip) (Use low fat to be &#8220;healthy&#8221;)<br \/>\n1 onion, finely chopped<br \/>\n1 can cream of mushroom or chicken soup (I use the low fat variety)<br \/>\n\u00bd of the cheese<\/p>\n<p><strong>DIRECTIONS:<\/strong><\/p>\n<p>Preheat oven to 350.  Steam veggies for 5 minutes \u2013 drain.  Put in casserole dish.  Beat eggs, and add rest of the sauce ingredients.  Pour over vegetables.  Sprinkle the rest of the cheese and add croutons*<\/p>\n<p>Bake 20 minutes covered, and 20 minutes uncovered.<\/p>\n<p><em>* In place of store-bought croutons, I usually take whole wheat bread and crumble with a chopper.
