{"id":44,"date":"2006-02-12T14:29:00","date_gmt":"2006-02-12T14:29:00","guid":{"rendered":"http:\/\/recipeforsuccess.wordpress.com\/2006\/02\/12\/roasted-vegetable-gratin\/"},"modified":"2006-02-12T14:29:00","modified_gmt":"2006-02-12T14:29:00","slug":"roasted-vegetable-gratin","status":"publish","type":"post","link":"https:\/\/dutchblitz.net\/recipes\/roasted-vegetable-gratin\/","title":{"rendered":"Roasted vegetable gratin"},"content":{"rendered":"<p>INGREDIENTS:<\/p>\n<p>4 medium tomatoes, cut into chunks<br \/>\n2 medium zucchini, chopped<br \/>\n2 cups sliced mushrooms<br \/>\n1 medium red onion, coarsely chopped<br \/>\n1 tsp minced garlic<br \/>\n1 tbsp olive oil<br \/>\n1 tbsp balsamic vinegar<br \/>\n1 tbsp fresh herbs, such as rosemary, basil, oregano or thyme<br \/>\n1\/4 tsp each salt and freshly ground black pepper<br \/>\n1 cup fresh whole wheat bread crumbs<br \/>\n1\/2 cup freshly grated parmesan cheese<br \/>\n1\/2 tsp dried thyme<\/p>\n<p>DIRECTIONS:<\/p>\n<p><u>Bread crumbs:<\/u><\/p>\n<p>Tear a slice of multigrain in whole wheat bread into large pieces and place them in a food processor, or use a mini chopper.  1 slice of bread makes about 1\/2 cup of bread crumbs.<\/p>\n<p><u>Dish:<\/u><\/p>\n<p>Spray a 9&#215;13 dish with baking spray.  Add the veggies.  Add garlic, olive oil, vinegar, herbs, salt &amp; pepper.  Mix well.<\/p>\n<p>Roast, uncovered, at 425 for 25 minutes.  While roasting, prepare topping.  Combine bread crumbs, parmesan &amp; thyme in a small bowl &amp; mix well.<\/p>\n<p>Remove veggies from oven.  Sprinkle crumb mixture evenly on top.
