{"id":46,"date":"2006-02-18T02:57:00","date_gmt":"2006-02-18T02:57:00","guid":{"rendered":"http:\/\/recipeforsuccess.wordpress.com\/2006\/02\/18\/peanutty-chicken\/"},"modified":"2006-02-18T02:57:00","modified_gmt":"2006-02-18T02:57:00","slug":"peanutty-chicken","status":"publish","type":"post","link":"https:\/\/dutchblitz.net\/recipes\/peanutty-chicken\/","title":{"rendered":"Peanutty Chicken"},"content":{"rendered":"<p>From Auntie Judy.<\/p>\n<p><span style=\"color:#cc0000;\">So so so so so so so so good!!!!!!!!!!!!!!!!!!!!!!!!!<\/span><\/p>\n<p class=\"MsoNormal\" style=\"line-height:12pt;\"><span style=\"font-size:12pt;font-family:Arial;\"><\/span><\/p>\n<p>  <span style=\"text-decoration:underline;\"><\/span><\/p>\n<p class=\"MsoNormal\" style=\"margin-left:18pt;text-indent:-18pt;line-height:12pt;\"><!--[if !supportLists]--><span style=\"font-size:12pt;font-family:Arial;\"><span>4<span>        <\/span><\/span><\/span><!--[endif]--><span style=\"font-size:12pt;font-family:Arial;\">boneless chicken breast halves, cut in strips <\/span><\/p>\n<p class=\"MsoNormal\" style=\"text-indent:36pt;line-height:12pt;\"><span style=\"font-size:12pt;font-family:Arial;\">(drain on paper towel to remove excess moisture for best browning)<\/span><\/p>\n<p class=\"MsoNormal\" style=\"line-height:12pt;\"><span style=\"font-size:12pt;font-family:Arial;\">Pam or oil for sauteing<\/span><\/p>\n<p class=\"MsoNormal\" style=\"line-height:12pt;\"><strong><span style=\"font-size:12pt;font-family:Arial;\"> <\/span><\/strong><\/p>\n<p class=\"MsoNormal\" style=\"line-height:12pt;\"><strong><span style=\"font-size:12pt;font-family:Arial;\">Sauce:<\/span><\/strong><span style=\"font-size:12pt;font-family:Arial;\"><\/span><\/p>\n<p class=\"MsoNormal\" style=\"line-height:12pt;\"><span style=\"font-size:12pt;font-family:Arial;\"> <\/span><\/p>\n<p class=\"MsoNormal\" style=\"line-height:12pt;\"><span style=\"font-size:12pt;font-family:Arial;\">3 &#8211; 4 Tbsp. finely chopped onion<\/span><\/p>\n<p class=\"MsoNormal\" style=\"line-height:12pt;\"><span style=\"font-size:12pt;font-family:Arial;\">2<span>   <\/span>garlic cloves, chopped fine (use a garlic press!!)<\/span><\/p>\n<p class=\"MsoNormal\" style=\"line-height:12pt;\"><span style=\"font-size:12pt;font-family:Arial;\">1 &#8211; 2 tsp. sweet chili sauce &#8211; Asian food section of store<\/span><\/p>\n<p class=\"MsoNormal\" style=\"line-height:12pt;\"><span style=\"font-size:12pt;font-family:Arial;\">1\/2 cup crunchy peanut butter (use smooth if necessary)<\/span><\/p>\n<p class=\"MsoNormal\" style=\"line-height:12pt;\"><span style=\"font-size:12pt;font-family:Arial;\">2 Tbsp. fresh lime juice (1 lime) &#8211; microwave lime for 20 sec. for more juice<\/span><\/p>\n<p class=\"MsoNormal\" style=\"line-height:12pt;\"><span style=\"font-size:12pt;font-family:Arial;\">grated rind of lime, optional &#8211; for enhanced lime flavour<\/span><\/p>\n<p class=\"MsoNormal\" style=\"line-height:12pt;\"><span style=\"font-size:12pt;font-family:Arial;\">1 &#8211; 2 tbsp. soy sauce (or more to taste)<\/span><\/p>\n<p class=\"MsoNormal\" style=\"line-height:12pt;\"><span style=\"font-size:12pt;font-family:Arial;\">1 Tbsp. grated fresh ginger <\/span><\/p>\n<p class=\"MsoNormal\" style=\"line-height:12pt;\"><span style=\"font-size:12pt;font-family:Arial;\">1 can (400 ml.) coconut milk<\/span><\/p>\n<p class=\"MsoNormal\" style=\"line-height:12pt;\"><span style=\"font-size:12pt;font-family:Arial;\"> <\/span><\/p>\n<p class=\"MsoNormal\" style=\"line-height:12pt;\"><span style=\"font-size:12pt;font-family:Arial;\">Saute chicken strips.<span>  <\/span>Remove to a separate plate.<\/span><\/p>\n<p class=\"MsoNormal\" style=\"line-height:12pt;\"><span style=\"font-size:12pt;font-family:Arial;\"> <\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:12pt;font-family:Arial;\">Saute onion and garlic in drippings over medium heat until softened but not browned.<span>  <\/span>Add remaining ingredients in order.<span>  <\/span>Stir well to mix.<span>  <\/span>Taste and adjust flavours!!!<span>  <\/span>Add chicken strips and simmer for about 20 minutes.<span>  <\/span>Serve with rice.<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:12pt;font-family:Arial;\"> <\/span><\/p>\n<p class=\"MsoNormal\"><strong><span style=\"font-size:12pt;font-family:Arial;\"> <\/span><\/strong><\/p>\n<p class=\"MsoNormal\"><strong><span style=\"font-size:12pt;font-family:Arial;\">Judy&#8217;s notes:<\/span><\/strong><span style=\"font-size:12pt;font-family:Arial;\"><\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:12pt;font-family:Arial;\"> <\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:12pt;font-family:Arial;\">Chicken breasts cut into strips very easily when partially frozen. Cut across the grain with a sharp knife.<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:12pt;font-family:Arial;\"> <\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:12pt;font-family:Arial;\">Whenever you need chopped onion in a recipe, chop a whole large onion.<span>  <\/span>Use what you need, then store the rest in an airtight container or freezer bag for next time.<span>  <\/span>Saves time next time.<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:12pt;font-family:Arial;\"> <\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:12pt;font-family:Arial;\">USE A FRESH LIME!!<span>  <\/span>The difference in flavour is incredible and they are so inexpensive at produce markets.<span>  <\/span>Get a juicer if you don&#8217;t have one!<span>  <\/span>For the grated rind, one of those<span>  <\/span>&#8220;V&#8221; shaped vegetable peelers that has a grater in the handle is perfect.<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:12pt;font-family:Arial;\"> <\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:12pt;font-family:Arial;\">Fresh ginger keeps well wrapped in plastic wrap in the fridge or can be frozen and then grated from the frozen state, if necessary.
