{"id":47,"date":"2006-02-18T03:00:00","date_gmt":"2006-02-18T03:00:00","guid":{"rendered":"http:\/\/recipeforsuccess.wordpress.com\/2006\/02\/18\/enchiladas-fantastic\/"},"modified":"2006-02-18T03:00:00","modified_gmt":"2006-02-18T03:00:00","slug":"enchiladas-fantastic","status":"publish","type":"post","link":"https:\/\/dutchblitz.net\/recipes\/enchiladas-fantastic\/","title":{"rendered":"Enchiladas Fantastic"},"content":{"rendered":"<p class=\"MsoNormal\"><span style=\"font-size:12pt;font-family:Arial;\">From Auntie Judy!<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:12pt;font-family:Arial;\"><br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:12pt;font-family:Arial;\">1 lb. ground turkey (or ground beef)<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:12pt;font-family:Arial;\">3 <span> <\/span>cups salsa, divided<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:12pt;font-family:Arial;\">1 (10 oz.) package frozen chopped spinach, thawed, squeezed dry<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:12pt;font-family:Arial;\">2 \u00bd <span> <\/span>tsp. ground cumin, divided<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:12pt;font-family:Arial;\">1\/2 tsp. salt<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:12pt;font-family:Arial;\">1 (250 g.) pkg. cream cheese, cubed<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:12pt;font-family:Arial;\">12 flour tortillas (7 inch), warmed<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:12pt;font-family:Arial;\">1 (14 oz.) can diced tomatoes, undrained<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:12pt;font-family:Arial;\">1 cup shredded cheddar cheese<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:12pt;font-family:Arial;\"> <\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:12pt;font-family:Arial;\">Optional toppings:<span>  <\/span>shredded lettuce, black olives, diced avocado, sour cream<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:12pt;font-family:Arial;\"> <\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:12pt;font-family:Arial;\">In a large skillet, cook turkey until no longer pink, breaking it into small pieces with a spoon.<span>  <\/span>Drain excess fat. Add 1 cup of the salsa, the spinach, 1 1\/2 tsp. of the cumin and salt.<span>  <\/span>Cook and stir 5 minutes or until most of the liquid has evaporated.<span>  <\/span>Add cream cheese stirring just until melted.<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:12pt;font-family:Arial;\"> <\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:12pt;font-family:Arial;\">Spoon about 1\/2 cup filling down centre of each warmed tortilla; roll up and place seam side down in a lightly greased 13X9 baking dish.<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:12pt;font-family:Arial;\"> <\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-size:12pt;font-family:Arial;\">Combine tomatoes and remaining 2 cups salsa and 1tsp. cumin.<span>  <\/span>Spoon over enchiladas.<span>  <\/span>Bake at 350 F. for 20-30 minutes or until hot.<span>  <\/span>Sprinkle with cheddar; return to oven 2 minutes.
