It&#8217;s pasta shaped like pearls of barley; frequently prepared with lamb in Greek cuisine<\/p>\n<p>INGREDIENTS<\/p>\n<p>3 Tbsp. butter<br \/>\n1 1\/2 cups orzo<br \/>\n3 cups chicken broth (750ml)<br \/>\n1\/2 cup grated parmesan<br \/>\n6 Tbsp. chopped basil or 1 1\/2 tsp. dried<br \/>\nsalt and pepper<\/p>\n<p>DIRECTIONS<\/p>\n<p>Melt butter in skillet over medium-high heat.  Add orzo and saute 2 min. until slightly brown (watch closely as it can burn).  Add broth and bring to a boil.  Reduce heat, cover and simmer until orzo is tender and liquid is absorbed&#8230;20 min. or more.  Mix in parmesan and basil.  Season with salt and pepper.  Transfer to shallow bowl.  Serves 6.
