{"id":90,"date":"2007-10-29T21:29:16","date_gmt":"2007-10-30T04:29:16","guid":{"rendered":"http:\/\/recipeforsuccess.wordpress.com\/2007\/10\/29\/spanish-chicken-and-rice\/"},"modified":"2007-10-29T21:29:16","modified_gmt":"2007-10-30T04:29:16","slug":"spanish-chicken-and-rice","status":"publish","type":"post","link":"https:\/\/dutchblitz.net\/recipes\/spanish-chicken-and-rice\/","title":{"rendered":"Spanish Chicken And Rice"},"content":{"rendered":"<p>I got this from a Real Simple magazine and it is OH SO GOOD.<\/p>\n<p>INGREDIENTS:<\/p>\n<ul>\n<li>1 Tbsp olive oil<\/li>\n<li>1 pound boneless chicken boobies, cut into 2 1\/2 inch pieces<\/li>\n<li>1 medium onion, sliced<\/li>\n<li>1 pepper (green, red, whatever floats your boat), sliced<\/li>\n<li>2 cloves garlic, finely chopped<\/li>\n<li>1 cup dry white wine (with more for sipping)<\/li>\n<li>1 28-ounce can diced tomatoes<\/li>\n<li>1 cup white rice<\/li>\n<li>1 cup frozen peas<\/li>\n<li>1\/4 cup fresh parsley, roughly chopped<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<p>HEAT the oil in a large saucepan over medium heat.<\/p>\n<p>PAT the chicken with paper towels.  Season with salt and pepper and cook until golden brown, 2 minutes each side.<\/p>\n<p>ADD the onions and pepper.  Cook, stirring occasionally until soft, about 5 minutes.  Add the garlic and cook about 1 minute. Add the wine and the cans of tomatoes as well as their liquid.  Add the rice, 1\/2 tsp salt and 1\/4 tsp pepper.  Bring to a boil.  Reduce heat and simmer, covered, for 20 minutes.<\/p>\n<p>Stir the peas into the concoction and cook, covered, until heated throughout, about 2 minutes.<\/p>\n<p>Spoon onto plates and sprinkle with the parsley.<\/p>\n<p>I added shrimp to mix it up, but think I may exclude it next time.<\/p>\n<p>It was pretty tasty, regardless.<\/p>\n<p><a href=\"http:\/\/dutchblitz.net\/recipes\/wp-content\/uploads\/2007\/10\/img_6606-sm.jpg\" title=\"Mmmmm\u2026\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/dutchblitz.net\/recipes\/wp-content\/uploads\/2007\/10\/img_6606-sm.jpg\" alt=\"Mmmmm\u2026\" align=\"middle\" height=\"320\" width=\"480\" \/><\/a><\/p>\n<p>I would like to have taken a better photos, but Honey and my brother Lance were MOCKING ME FOR TAKING PHOTOS OF THE DINNER I MADE.<\/p>\n<p>Maybe they should eat KD for dinner.<\/p>\n<p>\ud83d\ude42<\/p>\n<p>A<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I got this from a Real Simple magazine and it is OH SO GOOD.
