Chewy Granola Bars

We’re still working on Miss Emily’s, um, bowel issues. I cracked out this recipe due to the ground flaxseed.

The kids LOVE them.

Bars

INGREDIENTS:

1 cup packed brown sugar
1/2 cup butter or margarine
1/2 c. sugar
2 Tbsp. honey or molasses
1/2 tsp. vanilla
1 egg
1 c. flour (You could use all whole wheat – I do)
1/2 tsp. cinnamon
1/2 tsp. baking soda
1/4 tsp. salt
1 1/4 cup rice krispies
1 cip ground flax seed or coconut (of course I use flax seed, stay near
a washroom)
1/2 or 1 c. chocolate chips (or raisins, cranraisins etc.) I did 1/2 cup chocolate chips
1 1/2 cup rolled oats

DIRECTIONS:

1. Preheat oven to 350
2. Beat B.sugar, sugar and butter
3. Blend in molasses, vanilla and egg
4. Combine flour, cinnamon, baking soda and salt
5. Add to other mixture
6. Stir in remaining ingredients
7. Press firmly in a greased 9 x 13 pan and bake for 20 -25 minutes
8. Cool and cut into rectangles

They sure don’t taste as healthy as they are!

  5. I love flax seed and tout it’s benefits to anyone who will listen! To reep the most benefits of flax, it should be ground though which makes me sad bc I love the nutty quality of it whole.

  6. With the above recipe I am going to try cutting the sugars in half and using “Black Strap Molasses” starting out with a quarter cup and going from there. I use flaxseed too and sometimes add cooked brown rice into recipes I do. The chewiness is great with the brown rice in a pancake verses say a potato. I do quite a bit of experimenting with recipes after looking at a basic one; sometimes it works really well…..
