Whipped Shortbread

I got this from Karen, and am ASTOUNDED that we have not posted it yet.

Crazy.

INGREDIENTS:

  • 3 cups flour
  • 1/2 cup cornstarch
  • 1 cup icing sugar
  • 1 pound butter

DIRECTIONS:

Whip the butter.

Add the rest.

Whip it for a long time. You will need a KitchenAid or other stand mixer. If you use a hand mixer, I apologize. I used to make them with a hand mixer and had to stop every few minutes and shake out my hand.

You will need to whip it for AT LEAST five minutes, or even ten.

Whip it, whip it good.

Every few minutes, push down the sides so everything gets the beating it deserves.

When you are done with the whipping, it should look like this:

Bake it at 325 F for 20 minutes.

I normally hate shortbread, but these?

Are like a taste of heaven.

    Also, did you know that Americans don’t call it icing sugar? 🙂 We call it powdered sugar down here. I rather like calling it icing sugar, though, since that’s what I usually make with it!

  3. This looks like recipe Jay makes. They melt in your mouth. And it’s not even chocolate. I have trouble wrapping my head around that. So I eat one of these and then a nanaimo bar.

  6. Ooooh, I’ve been making these every year since forever, and they bake up so light that you almost forget there’s a POUND of butter in there. Almost. I reccomend the double-layer baking sheet, so that the top of the cookie comes out the same colour as the bottom. Little bit of heaven.

  13. I’ve been making whipped shortbread for a good 50 plus years. Always a favorite with family and friends.
    A hint for you. If you add extra flour to the mixture, or part of the mixture, it can be patted out, or rolled lightly, for cut-out cookies.
    I usually do half drop, half holly leaf cut outs. Good stuff!

    They have been my favorite food since I was born.

  15. I have been making these for 45 years! I’m 56. I only went on line to see if anyone had MY Recipe! LOL
    They melt in your mouth! For Christmas, I add a 1/4 of a Marachino Cherry on top, just for a Chrismassy look!

  17. I have had this recipe for about 36 yrs. I got this recipe for an old friend I use to paint with. She has had for years. This is an old but faithful recipe that deserves to be written as a classic Christmas recipe.

  19. I make these with a cookie press to create shortbread fingers, then dip or drizzle with chocolate. Today I’m going to try dipping in white chocolate then crushed cocoa nibs…I can’t wait!
